Ruh-roh, I forgot who brought this…
Ingredients:
4 small zucchini, sliced (about 4 cups)
1/2 cup sliced red onion
1/2 cup shredded Parmesan cheese
1 T canola oil (sesame or olive will work too)
1 T lemon juice
1/2 tsp dried oregano
1/4 tsp salt
1/8 tsp ground black pepper
Toss all ingredients together in medium bowl.
