    Summer Zucchini Salad

    Hands on: 10 min / Total time: 10 min / Makes 6 servings (2/3 cup each)
    Ingredients:
    4 small zucchini, sliced (4 small = about 4 cups
    1/2 cup sliced red onion
    1/4 cup shredded Parmesan cheese
    1 Tablespoon Canola oil (sesame or olive will work too)
    1 Tablespoon lemon juice
    1/4 teaspoon dried oregano
    1/4 teaspoon salt
    1/8 teaspoon ground black pepper
    Directions:
    1. Toss all ingredients together in medium bowl
