16 oz Monterey Jack cheese, broken by hand into chunks
12 oz chopped mushroom + 1-2 chopped onions sautéed with salt, pepper, cayenne pepper, cumin – to taste
Place all above into baking dish and bake at 350° 20-25 minutes, or til cheese melted and slightly brown.
Meanwhile, toast corn tortillas (preferably El Milagro) over flame.
Spoon melted cheese mixture into tortilla, fold, enjoy!
