5# red potatoes scrubbed, diced, & boiled til tender but not crumbly, with or without skins
1 doz boiled eggs, peeled and diced
1-2 bunches spring onion, chopped
Sauce: 1 c. mayo, 1-2 c. Catalina dressing, salt & pepper to taste
Mix ingredients together; best if prepared night before serving.
