My friend Rose gave me this fantastic recipe, so of course I had to bring it to the retreat!
1 3/4 cup sugar
1 cup vegetable shortening, melted
3 eggs
2 tsp vanilla
3 cups flour
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 cup walnuts, chopped
1 cup raisins
2 1/2 cups diced green tomatoes
coconut (optional)
- Preheat oven to 350F.
- In bowl, cream sugar, shortening, eggs, and vanilla til smooth.
- Sift flour, salt, baking soda, baking powder, cinnamon, and nutmeg into egg mixture. Blend together.
- Stir in nuts, raisins, and tomatoes.
- Pour into greased 13×9 inch pan.
- Top with coconut, if desired.
- Bake in preheated oven one hour.
