Cous Cous with Apricots

Prepare two boxes of Near East “Cous Cous with Toasted Pine Nuts” according to package instructions. During the preparation, when the water just begins to boil, toss in a cup of chopped dried apricots before adding the couscous. When couscous is done, place in bowl uncovered and refrigerate for an hour, fluffing with fork occasionally. When cool, mix with dressing to your taste – I buy a bottled fruit dressing, usually Pear Vinegaraitte, or Pear Ginger, etc.
