Literally every time I make this, everyone wants the recipe! Very easy, very yummy.
Ingredients:
1 T peanut oil (or avocado, or grapeseed, or sesame)
2 T honey
8 oz/2 cups raw cashews
1-1/3 cup dry unsweetened shredded coconut
2 small red chili peppers, or 1 jalapeno (I actually double this as I like hot), finely chopped
salt & pepper
- Heat the oil for a few minutes and then stir in the honey.
- After a few seconds add the nuts and coconut; stir-fry until golden brown.
- Add the chillies; salt & pepper to taste; toss till well mixed.
- Serve warm or cooled.
