Can-Can Soup

Created by our lovely Vivian – and what a hit!

Ingredients:

1 can each: pinto beans, black beans, sweet corn, petite diced tomatoes (preferred)

All cans around 15 oz.

Directions:

Pour all cans with liquid into a pot, let simmer for at least 30 minutes – the more time the better. Can be cooked, refrigerated overnight, and reheated.  Consider topping with sour cream and shredded cheddar.
