Gluten-free brownies!!! Shared by Kathy S. (or O., whichever you prefer)
Ingredients:
- 1 15-oz can of black beans, rinsed & drained
- 3 eggs
- 3 T oil
- 1/2 cup cocoa
- 1/2 tsp baking powder
- pinch of salt
- 1 tsp vanilla
- 3/4 cup sugar
- 1/2 cup chocolate chips
- frosting (optional)
- additional chocolate chips (optional)
Instructions:
- Heat oven to 350 F
- Puree all ingredients except chips in a blender until smooth
- Add chips, stir, and pour into a greased 8×8 or 9×9 baking pan
- Bake for 30 minutes or until top is dry and edges pull away from the pan
- Brownies may be frosted with optional chips; pour on top after baking and let melt
