Black Bean Brownies

Gluten-free brownies!!!  Shared by Kathy S. (or O., whichever you prefer)

Ingredients:

  • 1 15-oz can of black beans, rinsed & drained
  • 3 eggs
  • 3 T oil
  • 1/2 cup cocoa
  • 1/2 tsp baking powder
  • pinch of salt
  • 1 tsp vanilla
  • 3/4 cup sugar
  • 1/2 cup chocolate chips
  • frosting (optional)
  • additional chocolate chips (optional)

 

Instructions:

  1. Heat oven to 350 F
  2. Puree all ingredients except chips in a blender until smooth
  3. Add chips, stir, and pour into a greased 8×8 or 9×9 baking pan
  4. Bake for 30 minutes or until top is dry and edges pull away from the pan
  5. Brownies may be frosted with optional chips; pour on top after baking and let melt
